Pizza Thins

The sauce for this is a home-made tomato sauce I make in my slow cooker.
Sauce:
Diced tomatoes
Turkey burger
Italian seasoning, garlic, salt to taste

Pizzas:
Sandwich thins
Shredded Cheese


Pizza thins are a gift.  They are healthy, low in calories and satisfying.
Spoon about 2 tbs of the tomato sauce on each thin.  Sprinkle 2 tbs of cheese on top of each and put them in the toaster oven for 5 min.






Asian Cucumber Salad
The trick with carrots in a salad is to nuke them for about 1 or 2 min before putting them in.  
That way you don't have to chase them around your plate with your fork.

Cucumbers
Baby carrots
Cranberries
Sesame seed oil, Balsamic vinegar, 
Ginger, Garlic, red pepper flakes





I try to get 5 fruits and vegetables in a day.  Lettuce salads get old.  I noticed I'll turn up my nose at the lettuce and love the dressing and other veggies. This cucumber salad is an alternative.  

Salad:  Add 1 cup chopped cucumbers, microwave 5 chopped baby carrots, and, believe it or not, 1/8 cup of raw cranberries. 

The Dressing:   Mix 1 tsp toasted sesame seed oil with 1 tbs rice vinegar, 2.5 tsp powdered ginger, 1 tsp garlic and 0.5 tsp red pepper flakes. 

Mix the dressing and pour it over the vegetables.






Mexican popcorn
I love this.  Popcorn popped in an air popper is less than 100 calories per 4-5 cups.  Instead of butter, add a spray butter and flavor with more than salt.  Eaten with a tall glass of flavored water, this fills me up!

Air pop popcorn, Spray with spray butter, and stir.  sprinkle about 1/2 tsp salt and 2 tsp taco seasoning over the top and stir again.  Sprinkle 4tbs mexican cheese over the top.  Put it in the microwave for 15 seconds.






Sweet and Sour Vegetables

I try to have cooked long grain brown rice on hand.   I cook it in batches and freeze it in 1/2 cup servings.
I heard that frozen vegetables ripen in the ground and are flash frozen hours after they are picked so they can be healthier than the 'fresh' vegetables in the grocery store. So I don't feel so bad taking this short-cut.

After the rice is frozen I add about a cup of frozen vegetables to several of the bags.  
When I am hungry and don't have time, I can pull out one bag, pop it in the microwave and add some sauce - in this case 2 tbs sweet and sour sauce.
